Jun Zhang will officially become the new proprietor of Mt. Dragon on July 1.

Zhang came to America in 2015 and chose Colorado because it was “very much like my hometown and very beautiful.” He hails from the northern regions of China in Jin Zhou City. He was currently working for a 720 Fusion Fresh, a restaurant in Steamboat Springs. Zhang says he always been in the restaurant business and likes it.

Mt. Dragon will keep its current menu, but Zhang will be adding specialty items and a sushi bar. He will also bring a chef who specializes in fusion cooking. Fusion is the popular style of combining or fusing cuisines of two different cultures into one new style of cooking. In addition, Zhang will also use his culinary skills in the kitchen to add even more specialty items.

Zhang will also apply for a liquor license to serve Sake, beer and wine.

Former owner, Tai Long is excited to be able to take a break and plans to spend some time with his family in Granby.
